“Pork Fat” comes in hot and doesn’t let up. It’s a locked-in instrumental from Ari Joshua on guitar, Delvon Lamarr on organ, Grant Schroff on drums, and Skerik on saxophone – musicians who’ve played together for years and know how to build a groove from the ground up.
Originally part of their live sets across the Pacific Northwest, the tune gets revisited with more bite and zero excess. Delvon’s organ has that rich, driving tone that fills the space without flooding it. Ari leans in with sharp, rhythmic guitar phrasing, locking tight with Schroff’s bounce-heavy drums. Skerik doesn’t hold back either, bringing in raw, squawking sax lines that cut through in all the right places.
It was recorded live in one session and you can tell. There’s nothing overworked or pieced together – just four players settling into a pocket and letting it breathe. The chemistry is immediate. Every hit and phrase has purpose, but nothing feels stiff or overly controlled.
Mell Dettmer engineered the session, with Jason Gray handling overdubs and mixing. The final master by Doug Krebs gives the track volume and clarity without killing the analog feel. Chris Ball’s artwork ties the whole release together with a nod to the roots of greasy funk and soul.
This is a track built for rooms with low ceilings and good speakers. It would fit naturally in gritty film scenes or period-inspired game soundtracks that lean into vintage tones and live rhythm section energy.
